I suffer from insomnia- I have since as long as I can remember. Many a night I will be awake until 4:00 am, 5:00 am, 6:00 am, sometimes even 7:00 am. It’s maddening. And so that I don’t waste my entire day, I force myself to get up after only about 5 hours of fitful sleep which just compounds my fatigue and sleepiness, making it beyond difficult to fall asleep the following evening. Spectacular Blueberry Scones
I would love to live in England. I love the accents, the tea, and scones. Granted I wouldn’t enjoy living under monarchy rule, I would enjoy being so close to all the places I’ve ever wanted to visit. We’ve recently moved to the South. South Carolina to be exact. There are numerous differences between the North and the South. There are also numerous differences between MN and SC. I went to Trader Joe’s today and when I was walking into the store, I saw a couple making sandwiches out of the back of their SUV. I figured they had to travel a ways to get to the nearest Trader Joe’s to them, and they were hungry and wanted to eat something before the long drive back. Anyway, I noticed they had some salami and French baguettes–which looked SO good. Their humble lunch in the parking lot inspired me to make these panini’s. I love panini’s. I’ve loved almost every dense, chewy dessert bar that has ever crossed my luscious lips.
