    Lemon Curd Mousse

I think I’m getting to the point where I am going to need to find another citrus to fall in love with. Either that or I need to take a creative writing class because I’m running out of things to talk about pertaining to my love of all things lemon.  Everyone knows by now that I LOVE lemons.  Every summer I look for new ways to incorporate it into a dish. This summer, I wanted easy lemon desserts and this treat totally fits the bill.  But sometimes coming up with something fresh and original isn’t as easy as it looks.  Luckily for me, and for you guys, I sometimes have brilliant ideas. No,…

    Ridiculously Easy Lemon Curd

Ridiculously Easy Lemon Curd is just that, ridiculously easy to make.  If you can measure ingredients and stand over a sauce pan and stir, you can make this lemon curd. Cross my heart people. Easy, tart, zesty, bright, fresh, lemon curdy goodness can be yours and you don’t need to be a professional baker to make it.  This recipe is my easy version of a citrus based curd. There are versions where you stand over a double boiler and whisk in tiny specs of chilled butter one piece at a time, wishing you’d remembered to run to the bathroom before you started whisking, and eventually having to go to the hospital because you…

    Old Fashioned Coconut Icebox Cookies

If you’re a fan of Dexter, you immediately thought about the Icebox Killer when you read the title of this recipe.  Luckily for us all, no brightly colored, manicured nails or unassuming serial killers made their way into this recipe.  Nope- just good old-fashioned yumminess.  Oh, and gobs and oodles of coconut.  It’s like a coconutty extravaganza y’all! Like lemons, I love coconuts. I think my top three dessert choices always have either lemon, coconut or a berry, such as raspberries or strawberries.  When I saw this recipe, I knew I had to try it. I made a few changes, changed out some of the not-so-good ingredients (like vegetable shortening) for butter, and replaced…

    Lemon Gem Cookies

It’s spring!! It’s been spring for a while here in South Carolina, but I try not to talk about it since they still have snow up in MN where I’m from.  For weeks I’ve wondered why none of my neighbors has opened their windows to air out their homes, let in the lovely fresh air and enjoy the breezes and the singing birds. Then one day when I had the windows wide open and fans blowing, too I discovered that an eighth of an inch of pollen covered every surface of my house inside and out and I’ve been blowing my nose non-stop.  On principle alone, I refuse to shut the windows and…

    Hot Fudge Chocolate Cake

Finally! It’s here! I’ve been promising this cake for what, two, or three weeks now?  Gah!  You’ll have to forgive me for that. I normally don’t feature a recipe on my blog unless I’ve tested it several times.  Unless of course, it’s just that amazing the first time around and I remember to write down all the components and measurements.  If not, I make it a second time and get it on the blog as soon as possible.  Other recipes take 3 or more attempts to get it just right. This recipe, however just did NOT want to be featured on the blog. Originally this was a Slow Cooker Hot Fudge Cake.  Nowhere…

    Cranberry-Coconut Oatmeal Cookies

Cookies!!  There aren’t too many people that don’t love a good cookie. I love home baked goods over store bought any day. Even thought I don’t make them all the time- mainly because since switching over to eating more whole, fresh, clean, real foods, I simply don’t crave these nearly as often as I once did, these really are scrumptious. Since ‘healthifying’ the way we eat, I’ve adopted the “Good, Better, Best” mindset.  An example would be, good is an organic, non-gmo packaged cookie with minimal ingredients, and ones that you can pronounce. In other words, no chemicals or nasties.  Better would be making the cookies from scratch, using as many organic ingredients…

    Real Food Triple Citrus Bars

Nothing brightens your house like the smell of citrus and I’d had lemon bars on my mind for a few days and felt it was time to break out Old Blue and make something citrus-y.  It had been a while since I’d made any type of dessert since the kitchen in the house we’re renting- A) depresses me, and, B) it has virtually no counter or storage space which makes the normally joyful, fun, therapeutic and exciting task of cooking, baking and recipe creating about as fun as having one of the Dementors from Harry Potter suck out your soul.  I think I’m going to call my kitchen the Horcrux,   as that…

    Balsamic Strawberries

One of my favorite things about summer is that berries are everywhere.  Before I switched to Real Food, I suffered a raw fruit and raw veggie allergy.  Almost all fruits and veggies, if consumed raw, gave me hives in my mouth, and tongue and down my throat.  My throat would start to feel tight and I’d have to run for the Benadryl.  Not an enjoyable way to live.  I learned that most of my problem was from the pesticides because I can consume organic varieties of those fruits without problems…except watermelon.  That one still remains a mystery. I love almost every berry out there.  My favorite is a tie between strawberries and raspberries. …
