Easy BBQ Chicken on the Grill
Grilling chicken has always been a frustrating endeavor for many people. You either end up with charred outsides and dry insides, or perfectly cook outsides and raw insides. Neither of those is good eating in my opinion and I don’t blame people for getting frustrated with grilling. Now if you happen to be the ultimate grill master, this post isn’t for you. This is for those of us who have struggled to get perfectly cooked chicken from our grill. Over the years I’ve developed a few tricks that have helped me out tremendously. I’m sure if we had a charcoal grill I might not have to put forth such an effort to ensure…
Minnesota Wild Rice Hotdish- A Recipe Remake
I’ve been working on remaking a family recipe that my Aunt MJ makes. Her recipe is great, but I thought it would taste even better if I added some plain Jasmine rice and a creamy sauce. I mentioned in the Perfect Wild Rice post that it has taken me a while to enjoy the taste of Wild Rice. My Aunt’s recipe uses all Wild Rice, and for my sensitive palate it’s a little too strong. And for The Stud Muffin, it’s just got too much rice. That man has never met a rice he liked. Unless Chipotle’s rice bowl fixin’s are dumped on top of it. Or if it is combined with Stir-Fry.…
How to Make the Perfect Wild Rice
I’m from Minnesota. It’s the land of Wild Rice. Did you know that Wild Rice is actually an aquatic grass seed, not a rice grain? ‘Tis true my Food Hippies. It’s a coarse annual grass called “zizania aquatica”. Despite its name, the plant isn’t even related to rice. For me, Wild Rice was an acquired taste. I’m not sure if I just had dishes from people who didn’t cook it long enough, or if I just didn’t have the palate for it. Whatever the reason, I shied away from it. Fast forward to a few years ago when I was working in a restaurant and developing a soup recipe with one of the chefs. He wanted a chicken…
30-Minute Monday– Italian Sausage, Pepper & Onion Hoagies
Happy Monday everyone! It’s time for another 30-Minute Monday dish. Are you excited? I know I am. This weeks dish was a tasty one. I loved the pepper and onion mixture SO much; that I served it over some linguine the next night for dinner and it was UH MAY ZING! Whoa! Yeah, if you would rather just skip the hoagie roll, boil up some pasta and top with a couple slices of the sausage, and a few spoonfuls of the peppers and onions. Yee-Haw it was tasty. Actually, now that I think about it, you should probably try this as a hoagie first simply because this was a very flavorful and filling…
30-Minute Monday- Crunchy Baked Cod
I’ve been looking for ways to add more fish into our diet. The Stud Muffin has been requesting it, and it’s just not something that I happen to have a ton of ideas for. I have a few French recipes, but my husband isn’t going to want to watch me turn cute little trouts bright blue with vinegar (Truite au Bleu). If I make that dish, and put it in front of him he’s going to tell me “I don’t eat Smurf fish”… So- you can see my dilemma. You’ll be happy to know that this recipe won’t turn your fish blue, and it’s quite tasty. So is Truite au Bleu, but that’s…
Makin’ Bacon
It’s official. I’m bored out of my mind. This means I’m totally ready to get back to blogging, and I think everyone in my house, pets included are very happy about this. I know I am. I honestly cannot take one more night of mindlessly flipping through a poor selection of available Netflix movies to entertain me. I’m going to lose my mind. My surgery went well. I sincerely thank you for all the prayers and well-wishes. They removed one tumorous parathyroid gland and sent me home about 8 hours after the surgery was over. I proceeded to develop a moderately severe allergic reaction to the surgical tape holding the gauze over the…

“Mmm Better” Cream of Chicken Soup
There is something to be said for making your own cream soups for cooking. Anyone can open a can of condensed cream of ‘something’ soup. The canned version is quick and easy, but no one, and I mean no one needs that much sodium, MSG, or HFCS- I’m sorry, but what the heck is high fructose corn syrup doing in soup? I mean c’mon! I’ve probably made close to 2 dozen different kinds of soups in my lifetime and not one ever called for sugar, corn syrup or high fructose corn syrup. Not one. Ever. So what the heck is it doing in canned soups? The other ingredients found in these “Mmm Mmm”…
