Salsa Fresca
One of my first posts as Real Food Girl: Unmodified was a Garden Salsa recipe. It’s a favorite in our home and it is as tasty as it is pretty. But there is a small problem with that salsa post. The original (recipe) has photos that were taken with my iPhone and when there was no daylight in the kitchen. The photos just didn’t capture the vibrant colors in the salsa at all. Apple-Poppy Seed Coleslaw
With autumn fast approaching most blogger’s are already knee-deep in comfort food recipes, apple and pumpkin desserts and casseroles. But not me. Nope. We made it from MN to SC and it’s hot down here. In fact, it’s still in the 90s, so summer is alive and well in my area and it’s not too late to squeeze out a few more recipes that one might associate with summer barbecue’s or cook-outs, like coleslaw. Holy Guacamole!
My guacamole isn’t really holy, not in the spiritual sense of the word anyway… It’s just that there are zero catchy recipe titles for guacamole and I felt like spicing things up. The Stud Muffin has really developed a taste for avocados. I wasn’t sure he’d ever eat them after being told countless times that he hated them, he hated guacamole and nothing would change his mind. Until I made guacamole one night and he had it on a taco. BOOM! Yeah, that’s the sound of TSMs mind being blown.

Easy Cheesy Twice-baked Potatoes
When I sat down two weeks ago to make my menu for this week I must have been in a hurry because almost every dish I’ve made has had cheese in it. I still have two recipes to go and they both call for cheese. I’m laughing at myself. I have to make sure to spread those meals out over several weeks versus one week because my cheese bill was insane!! Twice-baked potatoes are one of my favorite side dishes. I especially like them with a good rib-eye steak.
