Risotto alla Milanese with Herbs
To Italians, a meal is more than just food… It’s an experience, an affair to be shared with family and friends. One bite of this risotto and I think you’ll agree this is an experience to be shared with family and friends. That is, if you can tear your mouth away from your fork. Risotto is a dish that is typically eaten prior to the main dish and is almost always associated with high end restaurants but in reality it is the quintessence of Italian home cooking and comfort food. A good risotto nourishes the soul. Because of my culinary background, I’ve tasted a lot of risotto. I’ve had some that were…

30-Minute Monday Skillet Shepherd’s Pie
I honestly can’t believe it’s Monday already! Man, where does the time go? This week we’re going comfort food, and what says comfort more than a saucy, meaty filling with veggies and mashed potatoes piled high on top? Pretty much nuthin’ if you ask me. When mashed potatoes hug a saucy, meaty, veggie-filled filling, it’s magic my friends. Comfort food magic! If you have anti-veggites (people who don’t like veggies that much) in your house, like I do, you can sneak in some extra veggies and they probably won’t notice. If I work veggies into something with meat and gravy, The Stud Muffin will happily eat the veggies. If they sit on his…

30 Minute Monday- Real Food Skillet Tamale Pie
Welcome to the fist installment of 30-Minute Monday’s. When I used to work out in the real world I never cared for Mondays. My biggest reason was I never slept well on Sunday nights and so I was always so sleepy on Monday. Typically I was dragging. By the time I got home from working a 10-hour day the last thing I wanted to do was spend 90 minutes or more in the kitchen making dinner. I wanted to jump in my flannel jammies, make something quick and filling and vegetate on the couch and snuggle with the fur babies and catch up on the day with The Stud Muffin. That ‘feeling’ was…

Skillet Chicken with Mushroom and Onion Cream Sauce
Follow my blog with Bloglovin Wanna know something funny? I don’t like mushrooms. Well, I do, but I won’t eat them. That’s not entirely true either. I’ll eat some of them as long as something else goes on the fork with the mushroom because it’s a textural thing and when I bite into one it makes my teeth squeak. Mushrooms creep me out. Well, they creep out my teeth. It’s the same thing with peas. I can’t eat peas. My teeth don’t like them. I can see all of you looking at me with one eyebrow raised and thinking “This chick is weeeeird!” Perhaps, but I do love the flavor they impart so…

One Pot Hearty Beef Stew (Organic/GMO-Free)
I don’t know about you, but nothing warms me up like a bowl of beef stew. Rich gravy-like sauce, tender veggies, chunks of beef that melt in your mouth. It’s soul food if ever there was. This stew is comforting, hearty and it’ll warm you up. It’s like getting a hug from the inside out. Eating this stew even makes me happy. How’s that for emotional eating?

One Pot Jalapeno Chicken Corn Chowder
It’s the Saturday after Thanksgiving. You’ve just survived the official kick-off to the Holiday Season. Hopefully you’re one day closer to being able to fit back into a structured pair of pants, but if not, don’t worry. Soon you’ll be decking the halls, and fa-la-la-la-laa’ing while you sit in front of the TV watching Rudolph the Red Nosed Reindeer while stuffing fistfuls of Spritz cookies and homemade fudge down your pie hole and your yoga pants will become your best friend. You might as well just kiss your jeans goodbye until January 2nd, when you join a gym (again) to get rid of those pesky 15 pounds you put on over the past…
