Lemon Curd Mousse
I think I’m getting to the point where I am going to need to find another citrus to fall in love with. Either that or I need to take a creative writing class because I’m running out of things to talk about pertaining to my love of all things lemon. Everyone knows by now that I LOVE lemons. Every summer I look for new ways to incorporate it into a dish. This summer, I wanted easy lemon desserts and this treat totally fits the bill. But sometimes coming up with something fresh and original isn’t as easy as it looks. Luckily for me, and for you guys, I sometimes have brilliant ideas. No,…

Cheesy Orzo with Broccoli
Earlier on in my blogging career I stumbled upon this side dish while wasting time trying to solve the toughest world problems by doing research online. Before the idea to start my blog was ever hatched in my special little mind, I used to follow quite a bit of non Real Food bloggers. No shame in that. A good recipe is a good recipe. Sometimes you just have to Real Foodify it, as I like to say. This recipe came from Iowa Girl Eats. She’s got a great little blog filled with some tasty recipes that are easy for me to adapt to our real food lifestyle. Many of her more current recipes…

30-Minute Mondays– Maple Soy Salmon
One of the things that I love about cooking, and photography for that matter, is that it keeps me humble. According to The Stud Muffin, I need to keep my ego in check, so he’s pleased that I’ve found things that challenge me and keep me humble. The reasons that cooking (and photography) keeps you humble is the moment you think you’ve mastered a technique, ingredient, or a certain dish or recipe, something happens, call it misaligned stars, faulty human, bad ingredients, Murphy’s Law, humidity…whatever, but something happens and for whatever reason epic failure doesn’t even begin to cover how badly the end results were. As a food blogger and someone who develops recipes I…

30-Minute Monday Skillet Shepherd’s Pie
I honestly can’t believe it’s Monday already! Man, where does the time go? This week we’re going comfort food, and what says comfort more than a saucy, meaty filling with veggies and mashed potatoes piled high on top? Pretty much nuthin’ if you ask me. When mashed potatoes hug a saucy, meaty, veggie-filled filling, it’s magic my friends. Comfort food magic! If you have anti-veggites (people who don’t like veggies that much) in your house, like I do, you can sneak in some extra veggies and they probably won’t notice. If I work veggies into something with meat and gravy, The Stud Muffin will happily eat the veggies. If they sit on his…

Chocolate Depression Cake in a Mug
We have 11 weeks until we pack up our entire home here in MN and move down to SC. I’m starting to panic. Just a little. I have to have a somewhat major surgery in a few weeks, I have a house to sell, I have a moving/garage sale to organize, there is packing and deep cleaning that still needs to be done and I’m starting to wonder if one 26 foot U-Haul is going to be enough to hold all our stuff. Because I have no idea if that U-Haul is going to hold everything, I decided to start using up as much of my pantry baking staples as I could so…

Outta the Park BBQ Pulled Chicken… GMO-Free
A few months ago I was introduced to Beth, one of the owners of Outta the Park BBQ Sauce. I’d been commenting on my Facebook Page about how difficult it had been for TSM (The Stud Muffin) and I to find good tasting, organic condiments. We’d wasted close to a hundred dollars trying to find salad dressings we liked. I know, I know…I should make my own, but TSM and I don’t like the same types of dressings and I’ve never found a dressing that is comparable to that HFCS laden Western brand French dressing. But I digress. As I lamented about all the money we’d wasted trying to find decent tasting…

Real Food Roasted Vegetables
TSM (The Stud Muffin) doesn’t care much for veggies. In fact, it would be easier to get a 3 year old to eat their veggies than it is to get TSM to eat them. So I roast them. If they’re roasted he’ll eat them and the skies part and the angels sing and the birdies tweet and the sun shines and every little girl that wished for a pony gets one and my man gets some healthy veggies in his body. I’d roast veggies more often, but sometimes a girl just wants some steamed green beans, ya know? These veggies could NOT be easier to prepare. They are so easy, TSM made a…
