Salsa Fresca
One of my first posts as Real Food Girl: Unmodified was a Garden Salsa recipe. It’s a favorite in our home and it is as tasty as it is pretty. But there is a small problem with that salsa post. The original (recipe) has photos that were taken with my iPhone and when there was no daylight in the kitchen. The photos just didn’t capture the vibrant colors in the salsa at all. New photos and an update to the recipe were long over due. Because spring is here, and fresh veggies are on my mind, I’m going to change the recipe up a bit from the Garden Salsa recipe that is already on the…

Savory Balsamic Onion-Bacon Jam
Bacon. Caramelized onions, bacon, fresh thyme, white wine, bacon, brown sugar, balsamic vinegar, bacon, chicken stock, bacon. Let me guess, the only word you kept seeing was bacon. Yeah, I’m not surprised. This recipe was one of the first that I shared when I started my blog. You can see it HERE. The photos were taken with my trusty iPhone, and they’re pretty scary. I think that is why only a handful of my earliest and very faithful readers were brave enough to try this recipe. I’m thankful they did- because to this day, they can’t stop talking about this “jam”. I felt it was time to update this post and the photos.…

Real Food Enchilada Sauce
I love to spoil you guys. I really do. Case in point; tomorrow for 30-Minute Monday I’m sharing my Beef and Bean Enchilada recipe. But in order to have it fit into the 30-minute time frame, you guys would have to use a powdered enchilada mix. Which, if you can find one that is truly nothing but organic spices, that’s not a bad thing, but making one from scratch always seems like a better idea to me. In order for you guys to be able to make the enchiladas, I wanted you to have my Real Food Enchilada Sauce recipe. YAY!! And, if I don’t get this posted before Monday, you’ll have to…

Chicken Pasta Primavera
We love pasta in our home. I’m sure being married to an Italian has absolutely nothing to do with it at all. Because of our love for fresh pasta, I someday hope to own some special die casts for making my own shapes, like penne, and rigatoni. Until then, I buy imported organic dry pasta for dishes that call for something other than a long skinny noodle. Those I’ve got down pat. I really want to share my homemade pasta recipe with you guys, but I don’t have anywhere to attach my pasta maker in my kitchen. Which I affectionately call Lord Voldemort’s 8th Horcrux. As soon as I can figure out how…

30-Minute Monday– Italian Sausage, Pepper & Onion Hoagies
Happy Monday everyone! It’s time for another 30-Minute Monday dish. Are you excited? I know I am. This weeks dish was a tasty one. I loved the pepper and onion mixture SO much; that I served it over some linguine the next night for dinner and it was UH MAY ZING! Whoa! Yeah, if you would rather just skip the hoagie roll, boil up some pasta and top with a couple slices of the sausage, and a few spoonfuls of the peppers and onions. Yee-Haw it was tasty. Actually, now that I think about it, you should probably try this as a hoagie first simply because this was a very flavorful and filling…

Real Food Split Pea and Ham Soup
Out of all the veggies in the world I strongly dislike peas. Naturally, I’m betrothed to a man who LOVES peas. I mean all out, get you in mah belly, I could eat three bowls each day LOVES peas. God has a sense of humor all right. Because I love my dear Stud Muffin, I make him Split Pea Soup, but I add ham because I love ham. Throw pork into a soup and I’m a happy girl. Throw peas into a soup and The Stud Muffin is a happy Man. Combine them, and you have two happy people eating a rather tasty bowl of soup, even though it does contain a pound…

Skillet Chicken with Mushroom and Onion Cream Sauce
Follow my blog with Bloglovin Wanna know something funny? I don’t like mushrooms. Well, I do, but I won’t eat them. That’s not entirely true either. I’ll eat some of them as long as something else goes on the fork with the mushroom because it’s a textural thing and when I bite into one it makes my teeth squeak. Mushrooms creep me out. Well, they creep out my teeth. It’s the same thing with peas. I can’t eat peas. My teeth don’t like them. I can see all of you looking at me with one eyebrow raised and thinking “This chick is weeeeird!” Perhaps, but I do love the flavor they impart so…

Caramelized Onion Burgers with Gruyere
It’s been very warm here in MN this summer. We had a miserably long winter–as in measurable snowstorms in May. Once summer hit, it’s been hot and humid ever since. I’m not complaining. When you have 6 months of winter, you welcome the heat, humidity, and the sun. But not the mosquitoes. I don’t welcome those at all. I’ve been working for the past 4 days in this 90-degree weather, organizing my garage for the moving sale I’m having later this week. I spend about 6-10 hours in the garage each day and by the time I’m finished, I’m spent. The last thing I want to do is spend eternity in the kitchen…
